How To Make Mirror Glaze Cake | Design Collections

Mirror Glaze Cake, been all-time favourites for the guest! Why? Because of stunning reflection and glazie look. Some cake artist make it into Galaxy design, especially when with sparkle sparkling ingredient, perfectly match with it reflection effect! Not to mention too the texture that little bit sticky making the overall consumption experience to another level! 

Bake and Create the Mirror Glaze Cake

  • For serving around 10-15 peoples.
  • 6-inch cakes - suggest pound or chocolate cake
  • Vanilla buttercream frosting
  • 8 ounces white chocolate chips (Link)
  • 1 cup white sugar
  • ½ cup cold water + ¼ cup warm water
  • ½ cup light corn syrup
  • ½ cup sweetened condensed milk
  • 5 teaspoons powdered gelatin (Link) /gelatin sheet (Link)
  • Food colouring (depends on colour you like to mix) (Link)

Step A: Prepare the Cake
Frost the vanilla buttercream on the cake. Do take note the smoother the surface, the look and feel will be better. I believe you saw before some of the mirror glaze cake with an uneven surface, that's what we try to avoid. The glaze will not able to cover the uneven situation much.

Step B: Making the Glaze
  1. Lets the gelatin bloomed. Put in the gelatin and pour the cold water, stir well until the mixture has the texture of the sauce. Set it aside for about 5-10 minutes to allow it to bloom.
  2. Add in the corn syrup, warm water, and sugar. Whisk well until fully combined.
  3. Next heat up the mixture on medium-low heat for 7-8 minutes. Make sure to allow it to boil the sugar until dissolved.
  4. Add the bloomed gelatin into the sugar mixture and whisk.
  5. Now the condensed milk, pour into the mixture and whisk once more.
  6. Pour the mixture into the white chocolate. Allow it to melt the chocolate for 2-3 minutes.
  7. Make it more creamy by using an electric mixer if required.
  8. Pour out and strain the mixture into a medium-sized bowl with a strainer on top. The purpose is to help remove any excess air bubbles and will keep the glaze smooth.
  9. Making colour, divide the glaze into multiple bowls and add the food colouring/gel and stir it

6 key points to TAKE NOTES when creating Mirror Glaze Cake!

1. Cake in frozen solid stat
The key factor to make the mirror cake success is Temperature - in frozen stat. Bake the cake and ice it or crumb coat with the frosting you like, and again, smooth is as perfect as possible, then freeze it overnight. Once take out from the freezer, pour it with the glaze prepared. Thats to ensure glaze solidifies over the cake!

2. Control the Glaze's temperature
Again—temperature is the key for perfect mirror glaze cake. Suggest between 90-95 degress fahrenheit or equivalent to 32-35 degree celcious. Some recies call to be warmer but suggest at lower little bit if possible.

3. Selection of gelatin
As you already know, there are powdered gelatin and gelatin, the suggestion is to use the gelatin sheet. Base on experience, it produce shinier finish, of cource the price may also slight different.  Dont too worry too if powdered gelatin, just to make sure when bloom the gelatin, it must in warm water to prevent the hot liquid from seizing or clumping when combined. Need alwas ensure the granules dissolved to avoid grainy glaze.

4. Only pour, no other action
The purpose of mirror glaze is to make it with reflection, right? To success, avoid making our mistake that try put the gliter separately, suggest to mix it with the glaze for perfect stunning look. Of course you still can put on the gliter later, be much more careful as that may ruin the overall look, it will give a dull shine compare to what it should be for reflective purposes.

5. Decide the glaze color
One of the challenging part is to find the balance between white chocolate and sweetened condensed-milk mixture. If you are looking for bright white, opaque color to serve as the foundation. Need to manage the ration of white chocolate to the sweetened condensed-milk, byt adding good amount of white food coloring. One suggestion is to avoid the light color, as that will result glaze look translucent. Darker base color especially as the base will reflect better but avoid all darker color ya.

6. Purpose of the Mirror Glaze Cake
The mirror glaze cake truthfully impressive and beautiful, but should always remember whats the purpose of mirror glaze cake. Base on the ingredient used, you should aware the texture and the sugar contents are at higher site, thus strongly suggest just for small/limitted serving. Of course, it alwys be the center piece especially for Instagram photo. If were for big party, suggest the minature version of mirror glaze cake.
